Cucumber (sowthekayi) rotti



Ingredients 

Grated cucumber—1 cup
Rice flour( akki hittu)—1/2 cup
Medium rave( semolina//sooji)—1/2 cup
Grated coconut (kayi turi)—1/4 cup
Green chillies finely chopped—2
Jeera (jeerige//cumin seeds)—1 tablespoon 
Chopped coriander leaves (kothambari soppu)—2 tablespoon 
Salt —to taste.
Oil--for making rotti

Method 

Wash and grate the sowthekayi (cucumber ) no need to peel the skin.

Take all the ingredients except oil in a bowl and mix well.
Combine everything to make a dough.
No need to add water,the water content in the cucumber will be enough to knead the dough.
 Cover and let it rest for 10 minutes.

Now to prepare rotti

Take a big lemon sized dough,place in the centre of tava or skillet and spread it gently to make a thin circle by wetting Hand  in water.
Now make a hole in the centre and few more around the rotti.
Pour oil in the holes and around the edges of rotti.

Cover with a lid place on the stove on medium flame.
Let it cook for 3 to 4 minutes.

Once it becomes brown remove the rotti.

Serve rotti with chutney or chutney pudi or pickle.
