Cream of palak soup
Ingredients
Palak ( spinach) leaves —1 bunchButter—1 tablespoon
Maida ( refined flour)—1 tablespoon
Milk—11/2 Cup
Garlic pods ( belluli)—4 crushed
White or black Pepper powder—To taste ( 1 tablespoon)
Water-1/2 cup
Fresh cream —2 tablespoon + for topping
Salt- to taste
Method To make palak puree
Wash the palak leaves thoroughly in water.
Chop them.
Boil water in a vessel,submerge palak leaves in boiling water for about one minute or until it shrinks.
Then drain water immediately in a colander and wash with cold water or transfer to a bowl with cold water,just to stop the process of cooking further.
Drain water completely.
Let it cool.
Then blend the blanched palak in a mixer grinder jar or blender to a smooth paste.
Method for preparing soup
Heat butter in a pan,add crushed garlic sauté for a while on medium flame.
Add maida and saute for a minute.
Add in palak puree and mix well keep stirring.
Add 1 cup of water and stir well.
Let it boil .
Now add milk And fresh cream and keep stirring on medium flame.
Finally add salt and pepper powder and bring to boil.
Pour soup to a soup bowl and drizzle( garnish) some cream and serve Pipping hot.
