Otthu shavige ( akki shavige) rice noodles
Ingredients
Rice ( dosa or sona masoori)—2 1/2 cups
Avalakki ( thick poha)—1/4 cup
Salt—to taste
Water
Method
Wash and soak both rice and avalakki and soak in enough water for 2 to 3 hours( or you can soak overnight if you want for morning breakfast)
Drain water .
Transfer to a mixer grinder jar and grind to a fine smooth batter adding sufficient water. Don’t add too much water while grinding
The amount of water depends on rice quality
The batter should be of neer dosa consistency .
Transfer the batter to a thick bottomed kadai or non stick pan.
Add salt (1 teaspoon is enough) .
Cook on medium flame stirring continuously,the batter will start thickening.
Keep on stirring until the batter turns like a dough.
All the batter comes together like dough,switch off the stove.
Now make a cyclindrical shaped dumplings out of the dough immediately when its still warm.
You can grease your hands and also dip your hands in water while making dumplings.
Place them in a greased plate
Transfer to a steamer and steam cook for 20 minutes on medium heat.
To test insert a knife it should come out clean.
Now grease the shavige press or chakli press with oil and place one dumpling in the press while its hot.
Tighten with the lid
Press the shavige over a plate or banana leaf.
Continue the same procedure till you finish all the dumplings.
Note;;keep the other dumplings in steamer Itself till you finish pressing all.
Traditional otthu shavige is ready . it's a malnaadu recipe.
Serve with ghasghase payasa ,kayi haalu( sweetened coconut milk),yellu bella pudi( TIL jaggery).or you can prepare like lemon chitranna,Kayi sasive chitranna,puliogre,curd etc.
