Masala puri recipe
Ingredients for boiling
Dried peas( batani)white or green —1 cup
Alugedde ( aloo//potato’s)—2 medium sized
Turmeric powder (arisina//haldi)—1/2 teaspoon
Water —to boil
Method
Soak Peas overnight.
Next morning drain the water,add fresh water and cook in pressure cooker along with aloo,arisina.
Cook on medium flame for 4 to 5 whistles.
Peas should cook well.
Ingredients for making masala
Pudina leaves—big handfull
Coriander leaves (kothambari soppu)—big handfull
Onion (irulli)—1 medium
Green chillies (hasiru menasina kayi)—1 or 2
Ginger (shunti//adarak)—small piece
Salt—to taste
Sompu kaalu( saunf//fennel seeds)—1 tablespoon
Coriander seeds (dhania//kothambari bija)—2 teaspoon
Jeera (jeerige//cumin seeds)—1 tablespoon
Jaggery powder (Bella//gud)—1 tablespoon
Cloves (lavanga)—4
Red chilli powder ( achha menasina pudi)—1 teaspoon
Garlic pods ( belluli)—4
Kaala namak ( black salt)—2 teaspoon
Method for making masala
Grind all the above ingredients together in a mixer grinder jar to a smooth paste adding sufficient water.
Once the pressure reduces open the cooker lid and mash the potatoes.
Add in the ground masala paste,mix well and let it boil on medium flame for 15 minutes.
Keep stirring in between.
Add water if needed to get the required consistency.
Switch off the stove.
Keep it aside for 5 to 6 hours,to enhance the taste.
Again heat it before making masala puri
Now method for preparing masala puri.
Ingredients required
Carrot— grated
Onion —chopped finely
Tomatoes —chopped
Cucumber—slices
Sev
Red chilli powder and salt —1 teaspoon each mixed
Sweet chutney
Puris
Masala prepared
Take a plate ,crush some puris.
Add the hot prepared masala,pour 2 to 3 teaspoon of sweet chutney,
Add onion,carrot grated,tomato,.
Sprinkle red chilli and salt mix.
Garnish with sev .
Serve immediately.
Spicy,tangy,tasty masala puri is ready to eat.
