Jahangir recipe
Ingredients
Urad dhal (uddina belle)—1/2 cup
Corn flour—1/2 cup
Sugar—2 1/2 cup
Water
Cardamom powder ( ellaki//elaichi)—1 tablespoon
Saffron strands (kesari//kesar)—big pinch
Lemon—1
Turmeric powder ( arisina//haldi)—1/2 teaspoon ( or red food colour )
Oil—for frying
Ziplock cover or pipping bag or Jahangir (jalebi) cloth
Method to make sugar syrup
Take sugar in a vessel,add water ( just to immerse sugar) ,turmeric powder,saffron strands,cardamom powder and keep it for boiling on medium flame.
Let it boil till sugar dissolves completely and keep stirring the syrup.
Boil it till it reaches a 2 string consistency.
Switch off the stove and add squeezed lemon juice and mix well.
Keep it ready( lemon juice is added to avoid crystallisation of sugar)
Method for preparing batter
Wash and soak uddina belle for 4 to 5 hours.
Drain water and transfer to a mixer grinder jar and grind it by adding very little water to a smooth paste.
The batter should be soft and fluffy like idli batter ( or medhu vada batter)
( you can grind it in wet grinder also)
Remove the batter to a plate and let it cool a bit.
Add corn flour little by little and beat the batter with your hands nicely .
Beating the batter is very important to make it fluffy,smooth and light.( just to aerate batter)
( you can add 1 teaspoon of rice powder if u want, i have not added in this recipe)
Method for preparing Jahangir
Heat oil in a shallow flat bottomed pan on medium flame.Now dampen the Jahangir cloth ,so that batter will not stick to cloth.
Pour a laddle full of batter in it.
Fold it by gathering all the corners.twist the cloth.And close it properly.
Now reduce the heat to low or sim,and start pipping out Jahangir into hot oil directly.
First Make a circle in “ clock wise” direction and continue with chain like rings in “ anti clockwise “ direction,on top of it so that shape is formed.
Fry it on both sides till they are crisp..
Remove from oil and drop it in prepared warm sugar syrup.
Press it gently with a laddle inside the sugar syrup.
Let it soak
Remove it and place on a plate
Repeat the process until you finish the entire batter.
Now tasty Jahangir is ready to eat.
