Irulli chitranna (onion chitranna)
Ingredients
Cooked rice—3 cups
Onion chopped—3
Green chillies—2 to 3 chopped
Lemon-(nimbe hannu )—1
Ginger (shunti)—small piece chopped
Curry leaves (karibevu//kadipatta)—few
Coriander leaves (kothambari soppu)—3 tablespoon chopped
Salt-to taste
Sugar—1 teaspoon
Kadale kayi bija (peanuts)—2 tablespoon
Note;; you can cook rice and keep it ready or you can use left over rice,make sure rice is cooked well and not mushy.
Prepare for seasoning (oggarane)
Oi—5 tablespoon
Mustard seeds (sasive)—1 teaspoon
Jeera (jeerige// cumin seeds)—1 teaspoon
Channa dhal (kadale belle)—1 tablespoon
Urad dhal (uddina belle)—1 tablespoon
Turmeric powder (arisina//haldi)—1 teaspoon
Asafoetida (hing//ingu)—1 teaspoon
Now prepare for chitranna
Heat oil in a pan or kadai,once hot enough add mustard seeds,jeera when it crackles add both kadale belle and uddina belle and sauté on medium flame,till both the dhals turns to light brown colour.
Now add kadale kayi bija and fry for a while.
Add karibevu,chopped onion and arisina,stir well.
Fry until onions turns translucent and soft.
Add in salt and sugar.mix well.
Switch off the stove.
Add chopped kothambari soppu, Squeezed lemon juice And mix well.
Finally add cooked rice and mix well gently.
Now onion chitranna is ready to serve.
