Instant jalebi recipe
Ingredients
Maida—1 cup
Sugar—2 cups
Ghee —1 tablespoon
Eno fruit salt—1 sachet( 5 grams)
Water —1 cup
Cardamom powder ( ellaki//elaichi)—1 teaspoon
Saffron strands ( kesari // kesar)— Big pinch
Turmeric powder (arisina//haldi)—1/2 teaspoon ( or orange food colour)
Oil—for frying
Method to make sugar syrup
Take sugar in a vessel,add water( 1 cup),turmeric powder,saffron strands,cardamom powder and keep it for boiling On stove on medium heat.Let it boil till sugar dissolves and keep stirring the syrup.
Boil till it reaches a 1 string consistency.
Switch off the stove and keep it ready .
Method for making batter for jalebi
Take maida in a mixing bowl,add ghee,eno fruit salt and mix everything well together.
Then add water little by little and make a thick lump free batter using your hands.
The batter has to be thick ( like idli batter) but of flowing consistency .
Now method for frying jalebi
Heat oil in a Shallow flat bottomed pan on medium flame.
Fill the ziplock cover or (pipping bag) Or jalebi cloth with the batter.
Make it like a cone and Make a small hole cutting the tip with a scissors.( if your are using ziplock cover)
Once’s oil is hot ,turn of the heat to low,and gently squeeze it over hot oil and form spirals,( in circular motion starting from centre and moving outside)
Let it gets fried On medium flame till crisp.
Remove it from oil and dip it the warm sugar syrup directly.
Press it gently with a laddle
Allow it to rest for a minute till it soaks syrup.
Remove it to a plate.
Continue to make all jalebi in the same process.
Serve crispy,crunchy juicy jalebis hot.
