Easy quick baby corn soup
Ingredients
Baby corns—10 to 15
Butter—1 tablespoon
Garlic(belluli)—1 small pod crushed
Ginger (shunti)—1/4 inch piece
Black or white pepper corn powder—1/4 teaspoon
Salt to taste
Fresh coriander leaves chopped (kothambari soppu)—2 tablespoon
Method
Wash the baby corns ,cut into pieces and transfer to a pressure cooker ,add sufficient water and cook for 3 whistles on medium flame.
( you can even boil them directly in a pan for 7 to 8 minutes)
Once’s the pressure reduces open the lid and take out the baby corns.
You can use the water for making soup.
Let the baby corns cool .
Transfer them to a mixer grinder jar and grind them to a coarse paste.
Now heat the butter in a pan add chopped ginger and garlic ,sauté for a minute on medium heat.
Add in ground baby corn paste and saute for a while.
Add sufficient water to get the soup consistency and add in salt ,pepper powder and let it boil.
Once its boiled add chopped coriander leaves and mix well and switch off the stove.
Serve hot .
