Rave unde (sooji ladoo)



Ingredients 

Chiroti rave (fine sooji//semolina)—1 cup
Powdered sugar—1 cup 
Finely grated dry coconut (copra// kobbari)—1/2 cup
Ghee(tuppa)—3 to 4 tablespoon 
Raisins (drakshi)—1 tablespoon 
Cashews (godambi) nuts—chopped into small pieces—1 tablespoon 
Badam (almonds//badami)—chopped into small pieces—1 tablespoon 
Cloves (lavanga)—6 to 7
Cardamom pods (ellaki//elaichi)—5
Saffron strands (kesari//kesar)—big pinch
Milk— 3 to 4 tablespoon 

Method 

Powder sugar in a mixer grinder jar to fine powder.and keep it ready.

Powder cardamom and cloves adding sugar or you can grind along with sugar or crush in mortar-pestle.

Now heat  1 tablespoon of ghee in a pan or kadai on medium heat,add drakshi,godambi,badam and roast until drakshi puffs up.

Take them out and keep it in a plate.

Now in the same pan,add rave and keep frying on low medium flame,until it turns aromatic ,.( it may take 5 to 6 minutes)
Keep on stirring to prevent burning.

Now add in saffron strands and mix well.
Also add in grated dry coconut and fry for 3 to 4 minutes.

Now switch off the stove.

To the same pan add powdered sugar,fried nuts,powdered clove and cardamom powder.mix well.

Add 2 tablespoon of ghee and mix everything well with hands.
Sprinkle milk and mix well with your hands.

Let the mixture rest for 2 to 3 minutes,so that rave turns  little soft.

Now take a small portion of the mixture and make small lemon sized balls (ladoo)
 You can grease your hand with ghee while making ladoo.

Note;;if you feel mixture is dry and doesn’t bind,add little more ghee or sprinkle a little more milk.


Make unde(ladoo) with the entire mixture.
Keep them in airtight container.
