Nipattu
Ingredients
Rice flour ( akki hittu )—1 cupMaida —1/4 cup
Chiroti rave ( fine sooji//semolina)—1/4 cup
Kadale kayi bija (ground nuts//peanuts)—1/4 cup
Hurigadale ( roasted gram//fried gram)—1/4 cup
Curry leaves (karibevu//kadipatta )—1/4 cup
Oil—2 tablespoon
Red chilli powder ( achha menasina pudi)—1 tablespoon
Asafoetida (hing//ingu)—1/2 teaspoon
Salt —2 teaspoon flat
Water—1/2 cup ( or little more )
Oil—to fry
Method
Grind hurigadale ,ground nuts,curry leaves to a coarse powder ( just pulse it) in a mixer grinder jar.
Take a mixing bowl,add rice flour,maida,rava,red chilli powder,hing, ground mixture and salt.
Heat 2 tablespoon of oil in a laddle,once hot pour over above dry mixture.
The oil should be so hot when you pour over dry mixture bubbles should form.

Mix everything together well.
Then add water little by little and knead to a smooth hard dough.( not too soft nor too hard).
Knead the dough well
Divide the dough to small lemon sized round balls.
Meanwhile heat the oil on gas stove in a kadai or pan on medium flame.
Take a plastic sheet or butter paper or parchment paper.
Grease the sheet as well as your hands with oil.
Take the ball and press it or flatten it using your fingers to form a small round circles.
Don’t make it too thin nor too thick.
Now drop nipattu in hot oil and fry them on medium low flame.
You can fry 3 to 4 in each batch.
Fry both sides till they turn crisp and light golden brown.
Once done remove them to a colander.
Repeat the same procedure for remaining dough.
Cool completely and store in a air tight container.
Now simple easy nipattu is ready .

Note ; you can also add white til( sesame seeds//yellu).jeera(jeerige//cumin seeds)—1 tablespoon each,and 1/4 cup copra(kobbari//grated dry coconut) .these are all optional and according to your taste.
