Mavina kayi thokku
Ingredients
Mavina kayi ( green mango)—2
Wash the mavina kayi and pat dry them completely.
Grate them,no need to peel the skin .
Salt to taste
Ingredients for masala powder ( for roasting)
Dry red bydagi chillies —10
Mustard seeds (sasive)—1 teaspoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Menthya kaalu (methi dana//fenugreek seeds)—2 teaspoon
Black pepper corns (menasu kaalu)—1 teaspoon
Method
Roast the ingredients given for masala powder adding a teaspoon of oil on medium flame.
Roast them till menthya kaalu turns to light brown.
Do not burn them
Let it cool completely
Grind the above in a mixer grinder jar to fine powder and keet it ready.
We will be using it later.
Ingredients for seasoning (oggarane)
Oil—4 tablespoon
Mustard seeds (sasive)—1 teaspoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Asafoetida (hing//ingu)—2 teaspoon
Turmeric powder (arisina//haldi)—1 teaspoon
Curry leaves (karibevu// kadipatta)—few
Now method for making thokku
Heat oil in a kadai or pan,once’s hot enough add sasive,jeerige when it crackles add hing,karibevu and arisina.
When its done add grated mavina kayi and saute for few minutes on medium flame.
Add in ground masala powder and keep stirring continuously.
Add salt also and mix well.
Cook them under low flame until the oil oozes out from thokku.
It may take around 7 to 8 minutes.
Keep on stirring
Once done switch off the stove.
Let it cool completely.
Transfer the thokku to a glass container.
Refrigerate it for longer shelf life.
