Mavina kayi panaka ( aam panna)

Ingredients 

Mavina kayi ( green mango)—1
Water—2 cups
Jaggery powder ( Bella//gud)—1/3 cup 
Cardamom pods (ellaki//elaichi)—2

Method 

Wash the mavina kayi and place in a pressure cooker with 2 cups of water.
Pressure cook for 3 whistles.

( note; you can steam the mavina kayi in a steamer or cook in a pan)


When the pressure reduces, open the lid and and take out the cooked mavina kayi.
 Do not discard the water.

Let the mango cool to room temperature.
Peel the skin ,peels come off easily.
Squeeze the pulp completely .
Scrape from the peels also.


Now transfer the pulp to the water in pressure cooker,add jaggery powder and crushed cardamom pods.

Put it back on stove and cook till the jaggery powder dissolves completely and it starts boiling.
Now switch off the stove.
Let it cool completely.

This is a preserve( concentrate) and you can store in refrigerator.

Now to prepare panaka 

Take 1/4 cup of preserve and add 3/4 cup of water and mix well.
You can add  some ice cube while serving.
You can even garnish with some mint ( pudina) leaves.

Note; i have used organic jaggery powder,you can substitute with sugar too.

You can even top it with chat masala or pepper powder,jeera powder,black salt.

Even the quantity of sugar or jaggery depends upon the sourness of mavina kayi.
