Maddur vade
Ingredients
Medium rava (semolina//sooji)—1/2 cup
Maida—1/2 cup
Rice flour (akki hittu)—1/3 cup
White til ( bili yellu// seasame )seeds—1 tablespoon
Powdered kadale Kayi bija (peanuts)—1/4 cup
Curry leaves (karibevu//kadipatta)—1/4 cup(Finely chopped)
Green chillies( hasiru menasina kayi)—2( finely chopped)
Ginger (shunti)—small piece( grated or finely chopped)
Onion chopped —1 cup( finely chopped )
Ghee—1 teaspoon
Hot oil—2 tablespoon
Salt—to taste
Oil for deep frying
Method
Take finely chopped onion,chillies,karibevu,salt,ginger in a mixing bowl.
Squeeze it nicely with hand,so that onion leaves out water.
Now add rava,maida,rice flour,powdered peanuts,til and mix well.
Add ghee and hot oil .
The oil should be so hot when you pour bubbles should form.
Combine all the ingredients well with your hands.
Add very little water ( just sprinkle) and make a dough.
Note; lesser water,more crispier Maddur vade will be and soaks less oil while frying.
Leave it for few minutes .
Make small lemon sized balls out of dough ,by greasing your hand.
Now take a butter paper or plastic sheet or parchment paper.
Grease the sheet .
Keep the ball between the sheets and very gently press using a roti press or flatten( pat) it using you palm
Don’t make thin or very thick vade,it should be medium thick
Meanwhile heat oil in a kadai on medium heat.
Once’s the oil is hot enough,turn theheat (flame) to low and drop the vade in oil.
Deep fry them on medium low flame on both sides till they turn light brown and crisp.
Once done remove to a colander using a perforated laddle.
Repeat the same procedure for all vade.
Now tasty Maddur vade is ready to eat .
Serve with chutney or sauce.
