Didir ( instant) mavina kayi uppinakayi ( green mango pickle )

Ingredients 

Mavina kayi ( green mango)—1 ( 1 heaped cup  mango pieces )
Dry red bydagi chillies—20
Salt- 2 tablespoon 
Sasive (mustard seeds)—1 tablespoon 
Menthya kaalu (methi dana //fenugreek seeds)—1 teaspoon 
Turmeric powder (arisina// haldi)—1/2 teaspoon 
Asafoetida ( hing//ingu) —1 teaspoon 
Water —1/2 cup ( or just a little more)

Method 

Wash the mavina kayi and dry it completely,and chop into small pieces.
No need to peel the skin of mavina kayi.
Transfer to a bowl.

Transfer red chillies,arisina,menthya kaalu,hing,salt,sasive  to a mixer jar and powder it coarsely .
Then add 1/2 cup of water and again grind it to a smooth fine paste.

Now add this paste to the chopped mango pieces and mix well.
You can also add the  little water  as well which is used for rinsing mixer jar .
Mix well.
Now uppinakayi is ready.


Now prepare for seasoning (oggarane)

Heat 1 tablespoon of oil in a laddle on medium flame.
Once’s hot enough add 1 teaspoon of mustard seeds ( sasive ).
When the sasive crackles pour over the uppinakayi  and mix well.
Keep it aside for 4 to 5 hours .

Now uppinakayi is ready to consume.

Transfer to a air tight bottle.
Refrigerate it for longer shelf life.


Note;; salt and spice level can be adjusted as per tanginess of mavina kayi.
