Congress kadale kayi bija recipe ( roasted masala peanuts)
Ingredients
Kadale kayi bija (ground nuts//peanuts)—2 cups
Curry leaves (karibevu//kadipatta)—handfull (1/2 cup)
Arisina (turmeric powder//haldi)—1 heaped full teaspoon
Red chilli powder ( achha menasina pudi)—1 teaspoon
Black pepper powder (kaalu menasu)—1 heaped teaspoon
Salt—1 teaspoon or to taste
Hing (asafoetida//ingu)—1 teaspoon
Oil—3 tablespoon
Method
Take a thick bottomed kadai or nonstick pan,roast kadale kayi bija on low medium flame.
Roast until they start cracking and until slightly turns to brown colour.
Do not burn the kadale kayi bija.
It may take nearly 7 to 8 minutes.
Remove from flame
Let it cool .
Transfer the roasted kadale kayi bija onto a clean towel or cloth .
Fold it and roll or pound gently with a rolling pin,take care not to powder kadale kayi bija
You can even rub with your hands.
Transfer to a plate ,separate the peels by tossing them gently.
Deskin and halve the kadale kayi bija.
Keep it ready.
Now to prepare congress masala
Heat oil in a pan or kadai,On medium flame,add karibevu and fry until crisp.
Then add roasted kadale kayi bija along with hing,red chilli powder,pepper powder,salt,arisina and mix well.
Keep frying on low flame.
So that all spices blend with kadale kayi bija.
Turn off the heat.
Allow it to cool completely.
Once cooled completely mix well with hands.
Now tasty,spicy congress kadale kayi bija is ready.
Store in an airtight container.
