Vegetable saagu

Ingredients 


Vegetables needed 

Dried green peas—2 cups 
Carrot-2 medium sized 
Potatoes (aloo//alugedde)—1 big 
Onion (irulli//pyaz)—1 medium 
Tomato—1 medium

You can  even take vegetables like 

Beans,navilukosu (knol khol),seeme badanekayi (chayote),or fresh green peas.

Ingredients for grinding 

Fresh grated coconut—1/4 to 1/2 cup
Hurigadale ( roasted gram//fried gram)—2 tablespoon 
Ghasghase (poppyseeds//khus khus)—1 tablespoon 
Jeera (jeerige//cumin  seeds)—1 teaspoon 
Dalchini (cinnamon sticks)-1 inch piece 
Lavanga (cloves)——2
Green chillies—2
Onion( irulli//pyaz)—1 small
coriander leaves (kothambari soppu)—chopped—2 tablespoon 

Transfer all the ingredients given for grinding into a mixer jar and and grind to smooth paste adding little water.

Ingredients for seasoning (oggarane)

ghee or Oil—1 tablespoon
Sasive (mustard seeds)—1 teaspoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Asafoetida (hing//ingu)—1 teaspoon 
Turmeric powder (arisina//haldi)—1/2 teaspoon
Curry leaves (karibevu//kadipatta)-few

Salt to taste 
Sugar—1 teaspoon 

Method 

Wash and soak  dried green peas overnight and pressure cook for 4 to 5 whistles.
 wash and Chop all the other vegetables into cubes.

heat oil in a pan or kadai,once hot enough add mustard seeds and jeerige.
After it crackles add asafoetida,curry leaves and sauté on medium flame.
Add in chopped vegetables  together along with turmeric powder,and add little water and cook .

Keep stirring in between.
Once the vegetables are cooked add boiled green peas and mix well.
Add in ground masala paste along with salt and sugar .
Saagu should be thick gravy consistency.so don't add too much water.
Let it boil on medium flame .
Switch off the stove once done.
Now vegetables saagu is ready  to serve

Serve with poori,chapattis,roti,rice,dosa,set dosa.
This is typical Karnataka and Mysuru style vegetable saagu.
