Nugge kayi Saaru ( drumsticks rasam)
Ingredients
Nugge kayi ( drumsticks)—3Tomatoes—2 medium
Toor dhal (togari bele //pigeon pea)—1/4 cup
Menasina pudi ( rasam powder//saarina pudi)—1 tablespoon
Jaggery powder 0r sugar( bella or sakkare)—1 teaspoon
Turmeric powder (arisina//haldi)—1/2 teaspoon
Curry leaves( karibevu//kadipatta)—few
Coriander leaves (kothambari soppu)—1 tablespoon chopped
Salt to taste
Water
Method
Wash and Chop nugge kayi into 3 to 4 inches pieces.
Wash togari bele and tomatoes.
Chop tomatoes into halves.
Transfer togari belle and tomatoes to a bowl( pressure cooker container) ,add turmeric powder and ghee.
Add sufficient water.
In a separate container (bowl ) take nugge kayi and add water to it.
Keep both the containers in a pressure cooker and boil for 3 whistles.
Switch off the stove and let it cool.
Once the pressure reduces open the lid,mash togari belle and tomatoes with a hand blender or whisk.
Transfer to a kadai or pan,add rasam powder and jaggery powder,curry leaves.
Mix well and let it boil on 5 minutes on medium heat or till rasam powder is cooked well till raw smell goes.
Now add in boiled drumsticks and mix .
Add salt and some more water to adjust the consistency of saaru.
Let it boil well.
Add chopped coriander leaves and mix well.
Now for seasoning (oggarane//tempering)
Heat 1 tablespoon of ghee in a laddle,once hot enough add 1 teaspoon of mustard seeds(sasive) and jeera(jeerige )
Once’s it stops spluttering add 1/2 teaspoon of asafoetida (hing).
Pour over boiled saaru.
Mix well.
Nugge kayi saaru is ready to serve.
Serve with hot cooked rice.
