Baingan bhartha



Ingredients 

 Black Baingan( egg plant // gundu badanekayi)—1 big
Tomatoes medium sized—3 
Onion (irulli// pyaz) medium sized—3
Green chillies—2 to 3 small
Ginger —small piece ( 1 to 2 inches)
Garlic pods ( belluli)—4 
Curry leaves (karibevu//kadipatta)—few
Coriander leaves (kothambari soppu)—chopped—2 tablespoon 
Jeera (jeerige// cumin seeds)—1 teaspoon 
Asafoetida (hing//ingu)—1 teaspoon 
Red chilli powder ( achha menasina pudi)—1/2 teaspoon 
Garam masala—1/2 teaspoon 
Salt to taste
Sugar—1 teaspoon 
Oil—3 to 4 tablespoon 

Method 

Wash the baingan and dry it .
 Smear or brush the baingan with little oil all over.
Then make 3 to 4 slits with knife all over the baingan.
Insert a garlic clove in one of the slit.
Then place the baingan directly on the flame and roast it,turning around until completely roasted
( you can even roast in microwave or electric grill)

Insert a knife and check if its done completely.( knife should go easily and you will notice the skin turning blackish in colour.

Immerse the baingan in normal water and remove the skin after few minutes.
Mash the baingan with a fork or fingers.


Chop the onions,tomatoes,ginger,garlic,and green chillies into small pieces and keep it ready.

Now to prepare bhartha 

Heat oil in a pan or kadai on medium flame,once hot enough add jeera seeds and asafoetida .
Add in chopped garlic,ginger,curry leaves,and green chillies and saute for a few minutes.
Then add chopped onions and fry for 4 to 5 minutes until onions turns translucent and soft,no need to brown them.
Add the chopped tomatoes and keep on stirring until tomatoes turns soft.
Add in sugar also.
When tomatoes are cooked add red chilli powder and garam masala powder and keep stirring on medium flame.

Finally add mashed baingan along with salt and mix well.
Cook the bhartha for few more minutes on low heat.
Add in the chopped coriander leaves and mix well and remove from flame.
Now baingan bhartha is ready to serve.
Serve with roti,chapattis,poori,and rice.

Note 

Add 1 tablespoon of fresh cream and 1 spring onion chopped to enhance taste.( optional)
 Water is not added in this recipe.
