Sajjige( Sheera // sooji halwa)

Ingredients

Chiroti rave ( fine semolina//sooji)—1 cup
Sugar—1 cup
Pure ghee ( tuppa)—3 tablespoon 
Saffron( kesari) soaked in tablespoon of milk—1 pinch
Raisins (drakshi)—1 tablespoon 
Cashews (godambi)—1 tablespoon 
Cloves (lavanga)—4
Cardamom pods (ellaki//elachi)—4 to 5
Water —2 1/2 cup

Method 

Heat 1 tablespoon of ghee in a non stick pan or kadai,on medium heat,fry raisins and cashews till cashews turns light brown and raisins puffs up.
Take out in a bowl and keep it aside.
Crush the cardamoms to fine powder.

Meanwhile boil water in a separate pan and add 1 teaspoon of ghee when its boiled and keep it ready.

Now in the same pan take chiroti rava and lavanga,and roast until you get nice aroma and rava turns to light brown in colour.
Now add the boiled water to roasted rava slowly turning heat to low stirring continuously.
Let it cook on low flame for a minute.
Add saffron milk,mix well.
Now add in sugar and ghee stir well and cook it for 2 more minutes.
Finally add cardamom powder and fried raisins and cashews.
Mix it well .
Now sajjige is ready to serve.
