Instant dhokla recipe
Ingredients
Besan (gram flour// kadale hittu)—1 cup
Water
Sugar—1/2 teaspoon
Salt—1/2 teaspoon
Turmeric powder (arisina//haldi)—1/2 teaspoon
Eno fruit salt—1 teaspoon
For seasoning (oggarane)
Oil—1 tablespoon
Mustard seeds (sasive)—1 teaspoon
Asafoetida(hing)—1/2 teaspoon
Green chillies—4 to 5
Curry leaves (karibevu//kadipatta)—few
Coriander leaves chopped finely (kothambari soppu)—1 to 2 tablespoon
Juice of 1/2 lemon
Salt—a pinch
Sugar -a pinch
Grated coconut—to garnish
Water-1/2 cup
Method
Take gram flour (besan),sugar,salt,turmeric powder in a mixing bowl.
Mix everything well.
Add sufficient water and mix well .
Whisk everything well,the batter should be of flowing consistency like dosa batter and not too thick.
Rest the batter for 10 minutes.
Grease a bowl or cake tin with oil.
Just before pouring batter to tin add eno fruit salt and mix it well.
Heat pressure cooker or idli cooker with water.place a stand inside.
Place the tin inside .close and steam cook for about 20 to 25 minutes on medium heat.
Now prepare for seasoning
Heat oil in a pan ,add mustard seeds (sasive),hing and let it splutter.
Add green chillies and curry leaves and saute till chillies turns to white colour.
Pour water,salt and sugar.bring it to boil and turn off the heat.
Add squeezed lemon juice,coriander leaves and stir well.
Take out the dhokla from tin and cut into squares.
Pour the hot tempered ingredients onto dhokla.
Let it soak for a while.
Garnish with grated coconut and little coriander leaves.
Serve with sweet chutney,and pudina chutney.
