Carrot ( Gajar ) halwa

Ingredients

Carrot —5 cups grated
Full cream milk— 5 cups
Ghee ( tuppa)—3 tablespoon
Sugar—2 cups
Cloves( lavanga)—6 to 7
Cardamom pods (ellaki)—6 to 7
Saffron ( kesari) strands —1 big pinch

For garnishing 

Raisins (drakshi)—1 tablespoon 
Cashews (godambi)—1 tablespoon 
Almonds( badami //badam)—1 tablespoon

Chop all the nuts and fry in a tablespoon of ghee and keep it ready.

Powder the cardamoms.

Method 

Wash all the carrots and trim the edges,and grate them .
Grate them in a food processor or with a hand grater.

Now take a pressure cooker add 2 tablespoon of ghee and heat it adding cloves.
Add grated carrots and saute for 6 to 7 minutes on medium heat.
Then add milk and mix well.
Close with lid and pressure cook for 2 whistles.

Once pressure reduces,open the lid mix well.and keep it back on stove and start cooking again on medium flame .

At this stage add saffron strands and sugar.
Keep on cooking until all the milk  starts to reduce and has completely evaporated.

Finally add powdered cardamom and fried nuts and mix well.

Now carrot halwa is ready to serve.
You can serve hot or cold.
