Akki hittu otthu shavige ( rice flour idiyappam)

Shavige ( idiyappam) with store bought rice flour 


Ingredients 

Rice flour—2 cups
Water—2 1/2 cup
Ghee or oil—2 teaspoon 
Salt to taste.

Method 

Heat water with salt and oil in a thick bottomed kadai or pan or nonstick pan.on medium flame 
When the  water  starts boiling ,slowly add rice flour stirring continuously on low medium flame.
Mix continuously till the rice flour mixed well and a soft dough is formed.
Cover  with a lid and let it cook in low heat for 3 to 5 minutes.

Now transfer the cooked dough to a damp cloth and and knead to a soft smooth dough.or knead well with wet hands.
Now make a cylindrical shaped dumplings out of dough and place them in a greased plate in a steamer .
Steam them for 8 to 10 minutes.

Now grease the chakli maker with some oil,and place the dumplings inside the maker.
Tighten with the lid and press shavige in circular motion on plates.

Keep covered the rest of the dough else they turn hard.
Now akki shavige is ready.




Now for lemon shavige

Oil—2 tablespoon 
Mustard seeds (sasive)—1 teaspoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Channa dhal (kadale belle)—1 tablespoon 
Urad dhal (uddina belle)—1 tablespoon 
Asafoetida—1/2 teaspoon 
Peanuts ( ground nuts// kadale kayi bija)—2 tablespoon 
Turmeric powder (arisina//haldi)—1 teaspoon 
Curry leaves (karibevu //kadipatta)—few
Grated coconut( kayi turi)—2 tablespoon 
Green chillies—2 to 3 chopped or minced

Lemon juice—2 tablespoon sugar—1/2 teaspoon 
Salt to taste

Now  prepare for seasoning (oggarane)

Heat oil in a kadai or pan,once hot  add mustard seeds,jeera,asafoetida.on medium heat 
When it stops spluttering add peanuts,channa and urad dhal and sauté till dhals turn brown and peanuts are crisp.

Add in minced green chillies,curry leaves and turmeric powder.saute for a while.
Add coconut grated,mix well.
Finally add salt ,sugar.mix everything together well.
Turn off the heat and add squeezed lemon juice.
Mix well and add shavige and mix well
Now lemon shavige ie ready to serve.

Same way you can prepare tamarind shavige.
