Instant crispy ragi dosa( finger millet)

Ingredients

Ragi. Flour—1 cup
Chiroti rave (semolina)—1/2 cup
Rice flour ( akki hittu)—1/2 cup
Green chillies—1 finely chopped
Jeera (jeerige// cumin seeds)—1 tablespoon
Curry leaves (karibevu //kadipatta)—1 tablespoon finely chopped
Coriander leaves (kothambari soppu)—1 tablespoon finely chopped
Salt to taste.
Water


Method 

Take ragi flour,rava,rice flour,  in a bowl . Mix well.

Add jeera,Salt mix well together.
Now add in chopped green chilli,curry leaves,coriander leaves mix everything well together.

Add in required amount of water to it and whisk well to avoid lumps.
The batter should be thin and water like.

Now to prepare dosa 

Heat iron dosa tava or skillet, On medium heat it should be really hot.
To check sprinkle  little water on the tava and water sizzles and evaporates.
Now  lower the flame to low and  pour  the dosa batter on hot tava from the outer circle and it will spread on its own.
Pour to fill in the centre to fill the uncovered areas .
Sprinkle oil all around dosa.
Cook on medium flame,covering with a lid for 10 to 12 seconds.
Once done fold.  No need to flip.
And serve hot, With chutney 

Make sure to pour the dosa to thin layer which makes dosa crispy.

Before making another dosa stir the batter very well with the laddle.

You can  also add  finely chopped onion and ginger to the above batter
