Gooseberry honey preserve( amla// nellikai )
Ingredients
Nelli kai( amla//gooseberries)—25
Honey—500 to 700 grams or as required.
Dalchini ( cinnamon) powder—1 teaspoon
Cardamom pods crushed—3 to 4
Nutmeg ( jaikai //jai phal)—1 teaspoon
Saffron ( kesari)—a pinch
Method
Wash the Nelli kai ,drain and dry them thoroughly.
They should be devoid of any moisture.
Now take a fork and pierce all the gooseberries or you can even cut them into small pieces.
Take a clean ,dry air tight bottle or container ,transfer all the gooseberries into it.
Add in cinnamon,nutmeg powder,
Also add crushed cardamom pods and saffron.
Pour the honey and mix them well.
Cover the entire thing with honey.
Take a large bottle ,do not fill the bottle up to the brim,as the gooseberries will release juice and jar will overflow.
So fill it up to 1/2 bottle.
Cover and keep it for 2 to 3 days in a cool place.
After 2 days the honey will become watery,this is the water oozing from gooseberries.
Now its ready to consume .
You can refrigerate it for longer shelf life.
Note
You can add any spices that you like to enhance the taste like black pepper corns etc.
Once all the gooseberries gets over ,you can add some more to the same liquid and use .
Do make it too soft by leaving it outside for a longer time.it's taste good crunchy.
