Boodugumbala kayi tirulu (rind) dosa


















Ingredients 

Dosa rice or raw rice or sona masoori—2 cups
Avalakki (poha// rice flakes)—1/2 cup
Uddina belle ( urad dhal)—1/4 cup
 Menthya seeds (fenugreek seeds)—1 tablespoon 

Fresh grated coconut—1 cup
Boodugumbala kayi tirulu—1 big cup
Salt to taste
 Oil to make dosa 

Method wash

Wash  and Soak the dosa rice,uddina belle,menthya seeds and avalakki in sufficient water for 5 to 6 hours.
 Peel the boodugumbala kayi and scoop out the tirulu and scoop out all the seeds .
And chop into small pieces.
 Transfer the soaked rice mixture ,boodugumbala kayi tirulu and coconut grated to a mixy jar and grind to a smooth batter

Boodugumbala kayi oozes lots of water ,so add little water or no additional water is required to grind.
 Add salt.

Transfer the batter to a big container  and keep it for fermentation overnight or 8 to 10 hours.


Next day fermented batter would have raised.mix the batter well.

Now to  make dosa

Heat a tava or non stick dosa griddle.smear some oil all over ,
Pour a laddle full of batter on tava and do like utthapan or set dosa .
Drizzle few drops of oil on dosa and cover and cook.
Once the dosa cooked from one side ,flip and roast the other side too.
Or you can do like regular dosa.

Now dosa is ready to serve 
Serve hot dosa with chutney and butter .
