Vegetable fried rice

Ingredients 

Jeera rice( small variety rice) —2 cups 
 

You can also use basmati rice or long grain rice or left over rice or from freshly cooked rice

Onion finely chopped—1 cup
Beans finely chopped—1 cup
Carrot cut into small cubes—1 cup
Capsicum cut into small cubes—1 cup
Green chillies—2 finely chopped 
Ginger paste—1 teaspoon or small piece 
Garlic—4
Curry  leaves ( karibevu//kadipatta)—few
Coriander leaves (kothambari soppu) finely chopped __2 tablespoon 
Black or white pepper powder—1 teaspoon 
Salt to taste
Sugar-1 teaspoon 

Oil—4 to 5 tablespoon 

Sauces

Green chilli sauce—1 tablespoon 
Red  chilli sauce—1 tablespoon 
Soya sauce—1 tablespoon 
White vinegar—1 tablespoon 

Method 

Wash and cook the rice in pressure cooker or rice cooker .
Add 2 to 21/2 cups of water to 1 cup of rice.
Let it cool.
We don’t want mushy rice.

Or else you can cook rice directly after soaking it for 30 minutes .

Now  heat oil in a kadai or pan or wok on medium flame,once hot enough add chopped garlic,ginger and green chillies.
Sauté for a minute.
Then add curry leaves and chopped onion,fry till they becomes translucent.
Then add beans and carrot cook them for a while sprinkling little water.
Keep stirring frequently.
Once done add in capsicum,cook for 2 to 3 minutes.
Add a teaspoon of sugar
For fried rice we don’t want mushy  vegetables,they should have crunch in it.

Now add in salt,and pepper powder mix well.
 Finally add all the sauces and vinegar and nix well.

Now add cooled rice and chopped coriander leaves.

Now mix everything together well gently .

Remove it to a serving bowl.
 Serve hot .

Variations 

You can add and remove vegetables as per your choice.
You can also add chopped cabbage,spring onions,baby corn,sprouts,green peas.
