Method

Add water little by little and knead the dough.
Add water till you get the soft, stiff ,pliable, smooth dough.
Smear 1 teaspoon of oil and smoothen the dough.
Keep the dough covered for 10 minutes or you can make immediately
Note
You can use food processor to knead the dough.
Now roll the dough and divide into equal balls.
Smoothen the balls by rolling them lightly in between your palms.
Take one ball ,roll it to a medium thick circles.( not too thin nor too thick) by dusting with flour
Or even you can roll it by smearing some oil.
Now to make pooris
Heat oil in a kadai on medium high heat.
The oil should be hot to get good pooris ,but not smoking hot.
Once the oil is hot enough slide the poori carefully to the hot oil,
Press it gently on top using perforated laddle.
It will help poori to puff up.
Flip to the other side carefully and fry on other side as well until golden and crisp.
Now remove it using perforated laddle onto a paper towel.
Now poori is ready to serve.
Serve with potato curry ,or saagu or kurma..
