Seven cup burfi
Ingredients
Besan ( kadale hittu // gram flour ) —1 cupGrated coconut—1 cup
Milk —1 cup
Pure ghee melted —1 cup
Sugar—3 cups
Cloves ( lavanga )—4 to 5
Cardamom pods ( ellaki //elachi)—5 to 6
Saffron ( kesar // kesari)—a big pinch
Grease a plate or tray with ghee and keep it ready.
Powder cardamom and cloves along with little sugar to fine powder
Method
To begin dry grind coconut in a mixer grinder without adding water or you can add as it is.
Now take a non stick kadai or pan or thick bottomed wide kadai .
Transfer besan to it and roast it for 4 to 5 minutes on medium flame ( this step is optional )
Now transfer all the other ingredients to it except cardamom powder.
Mix well and keep stirring on medium flame.
After a few minutes the mixture starts boiling,keep stirring.
After sometime the mixture will start becoming thick ,
At this stage add cardamom powder .
Mix well.
Now you can see the mixture start scraping the edges and keep stirring continuously to avoid burning at the bottom of kadai.
Finally the mixture starts leaving the edges and you can see whitish bubbles
Immediately transfer the mixture into the greased tray and tap the tray to spread evenly.
Now grease a knife and cut the mixture into pieces.
Let it cool .
Take out the pieces carefully.
Now tasty 7 cup burfi is ready to eat.
