Set dosa recipe

Ingredients

Rice ( sona masoori or dosa rice)—-2 cups
Parboiled ( kusubalakki) rice—1 cup
Urad dhal (uddina Bele)—1 cup
Menthya seeds( fenugreek seeds)—1 tablespoon
Puffed rice ( kadale puri or mandakki puri)—2 cups
Salt to taste
Water to soak

Method 

Wash and soak both the rice and urad dhal,menthya seeds in water.
Separetly soak puffed rice in a container.
Soak for 5 to 6 hours.


After 6 hours grind the soaked ingredients  in a mixer grinder or in a wet grinder to a smooth ,thick batter.
Adding too much water will make dosa batter watery.

Transfer the dosa batter into a big container.

Add salt and mix it with hand which helps the batter to ferment well.
Cover the container and leave overnight  or 8 hours the batter to ferment.
Next morning ,the batter has doubled .

 mix the fermented batter well.

Now to make set dosa

Heat the tava or skillet on medium heat.
Grease it.
Once the tava is hot enough,take a laddle full of batter and pour it in the centre.
Spread out in a circular motion,slightly thick than regular dosa.
Pour 1/2 teaspoon of oil on top and around edges.
Cover with a lid and cook for a minute on medium heat.
This set dosa has to puff up with lots of holes.
Flip it to the other side and cook it for few seconds to a golden brown from bottom.
Once done remove the dosa onto a plate.
Now serve dosa with  butter ,chutney ,vegetable saagu or any curry of your choice.
