Sowthekayi hesaru bele kosambari

Ingredients 

Sowthekayi ( cucumber)—2 medium sized.
Hesaru belle (moong dhal) or channa dhal ( kadale Belle)—3 tablespoon 
Grated coconut—3 tablespoon 
Green chillies—2 ( chopped)
Ginger—1 inch piece  grated 
Mustard seeds-( sasive)—1/2 teaspoon 
Hing (asafoetida)—1/4 teaspoon 
Salt to taste 
Chopped coriander leaves—1 or 2 tablespoon 
Ghee—2 teaspoon 

Method 

Wash and peel the skin  from cucumber and chop or cut into small pieces or cubes.

Wash and soak  hesaru belle (moong dhal) in water for 1 hour.

Now prepare for seasoning (oggarane)

Heat ghee in a laddle on medium heat.
Once hot enough add mustard seeds,hing,when it starts spluttering add chopped green chillies .
Fry it until chillies turns little white.
Turn off the heat.

 Drain water from moong dhal.

Now take chopped cucumber,drained dhal,coconut,coriander leaves,salt,ginger grated in a large mixing bowl.

Pour the prepared seasoning to this mixture.
And mix everything well.
Now kosambari is ready to serve.

Tips  

If you like squeeze little lemon juice as well.
