Seeme akki payasa. ( sabbakki // sabudana kheer)

Ingredients

Seeme akki ( sabudana //sabbakki)—1 cup
Sugar—3/4 cup
Ghee—2 tablespoon 
Cashew nuts (godambi)—1 tablespoon 
Raisins ( drakshi)—1 tablespoon 
Cardamom powder—1 /2 tablespoon 
Saffron strands —a pinch
Milk—3 cups
Cloves( lavanga)—4 to 5

Method 

Wash and drain water from sabudana.
Add  just enough water  to soak the  sabudana and keep it aside for 2 to 3hours. 

Note. 
I always soak sabudana overnight to avoid hardness in the center of sabudana.


 Now take a pressure cooker  add 1 tablespoon of ghee fry the cashews and raisins until cashews turns brown and raisins puffs up on medium flame.
Take out and keep it aside.

now transfer the soaked sabudana to the same pressure cooker ,add a teaspoon of ghee,cloves, and 1 cup of boiled milk  and pressure cook for 2 whistles.
Once pressure reduces,open the lid mix well and add 2 more cups of milk,sugar and saffron stands.
Let it boil for 5 minutes on medium low heat,keep stirring.

Now  finally add cardamom powder and fried raisins and cashews.
Mix well .
Now  payasa is ready to serve.
Serve hot or chilled.
