Kootu pudi (powder )recipe
Ingredients
Urad dhal (uddina belle)—11/2 cups
Channa dhal (kadale belle)—1/2 cup
Jeera (jeerige/cumin)—3/4 cup
Coriander seeds (dhania sabut/kothambari bija)—1/4 cup
Black pepper corns( kaalu menasu)—2 tablespoon
Red chillies(byadagi)—4
Curry leaves( karibevu// kadipatta)—1/2 cup
Ssp special Asafoetida ( hing)—1/2 teaspoon
Method
Firstly dry roast channa dhal on medium heat in a thick bottomed kadai or non stick pan till it turns brown.
Take out of flame and keep it aside to cool.
Next dry roast urad dhal also until it turns light brown.
Keep aside to Cool.
Now take jeera,dhania,pepper corns,asafoetida,red chilli together and dry roast till they are crisp and aromatic.
Take out of flame and cool.
Fry curry leaves till crisp.
Now cool all the ingredients to room temperature.
Mix all the roasted ingredients well and grind to fine powder or semi fine powder.
Mix well.
Store kootu pudi in air tight container.
