Phulka or roti recipe
Ingredients
Wheat flour—2 cups
Water - 1 cup
Salt—1 teaspoon flat
Ghee or oil—2 teaspoon
Method
Take wheat flour in a bowl,add salt,ghee mix well.
Now start adding water to the mix,begin to knead the dough.
Continue to knead the dough till it becomes soft and pliable.adding required amount of water.
Dough should not be too soft or too hard.
Now Set the dough aside to rest for 20 minutes covering with a lid.
You can also use food processor to knead the dough
Now to make phulkas
Now preheat the tava or skillet .
Now again knead the dough and divide into small portions ( lemon size balls ) ,roll the balls in the palms of your hands.
Flatten the ball ,sprinkle some wheat flour on rolling board ,and keep on rolling till you get a flat round circle using rolling pin.
Now put the roti on hot tava.
First cook on one side ,when half cooked turn and cook on other side.
Now hold roti with a tong and keep the first side which was cooked directly on gas fire ,
The roti will start to puff.
Turn and keep on other side .the roti will puff completely.
Remove and apply ghee.
You can keep them in a casserole or in a box .
Serve hot.
Tips
The tava or skillet has to be sufficiently hot to make phulkas.make rotis on high flame,on sim and low flame ,the phulkas become hard .
Ghee
