Mixed vegetables kootu

Ingredients 

Togari ( toor)dhal—1/2 cup
Kadale kayi bija( peanuts /ground nut)—2 tablespoon 
Fresh grated coconut—1/2 cup
Kobbari ( dry coconut /copra )—1/4 cup
Jaggery powder—1/4 cup
Turmeric powder—1/2 teaspoon 

Vegetables 

Sabbasige soppu—2 cups finely chopped 
Beans—1 cup
Carrot—1 cup
Gorikayi—1 cup
Seeme badane kayi—1 
( you can take any veggies of your choice) except onion ,brinjal .
Salt to taste.

For masala 

 Urad dhal (uddina belle)—1 tablespoon 
Channa dhal (kadale belle)—1 teaspoon 
Jeera. (Jeerige)—1 teaspoon 
Dhania seeds ( coriander seeds/kothambari  bija )-1/2 teaspoon 
Black pepper corns—1 tablespoon or 20 corns.
Red bydagi chillies—2
Asafoetida—1 teaspoon 
Oil —1 teaspoon 
Fry the ingredients given for masala adding oil on medium flame,till dhals turn to light brown.
Turn off the heat,take it aside to cool completely.

Now grind the fried masala along with fresh grated coconut and dry coconut to a smooth paste adding little water.

Now wash the dhal and vegetables.
Take this in a pressure cooker and add turmeric powder and water .
Pressure cook these on medium heat for 3 whistles.

Turn of the heat .let it cool
Once the pressure reduces open the lid mix well .
Transfer masala paste,salt ,jaggery powder to this and allow it to boil.
Add in  few curry leaves.
Boil well adding water to adjust consistency of kootu.

NOTE-- tamarind is not to be used for kootu recipes

Now prepare for seasoning (oggarane)

Heat 1 tablespoon of ghee in a laddle,once hot add 1 teaspoon of mustard seeds,jeera and asafoetida.
When it stops spluttering pour over kootu,mix well
Serve with hot cooked rice.
