Instant chakli recipe
Ingredients
Rice flour(idiyappam rice flour)—1 1/2 cups
Hurigadale powder( fried gram)—1/2 cup
Ghee—3 teaspoon
Salt—1 teaspoon
Asafoetida or hing—1/2 teaspoon
Cumin (jeerige) —1 teaspoon
Cumin powder—1 teaspoon
Red chilli powder—3/4 teaspoon
Water— 1 cup
Oil for frying
We also need--
Chakli press,parchment paper or plastic sheet.
NOTE
You can use idiyappam/pathiri rice flour or toleda akki hittu for good chaklis.
Method
Keep a small kadai on low flame ,take rice flour and sauté for 3 to 5 minutes.
Just warm the flour.
Switch off the stove.
Take this flour in a bowl,add in hurigadale powder,cumin seeds,cumin powder,salt,red chilli powder,ghee.mix well
Now add in water little by little to the flour mix and knead the dough soft.
(You can knead dough in food processor for softer dough)
Meanwhile heat the oil in a kadai on medium heat to deep fry the Chakkalis.
Now take half the dough knead thoroughly.
Grease the parchment paper or plastic sheet.
Also grease the chakli press too.
Place the dough in the chakli press and press it into round chakli
Prepare 5 to 6 chaklis.
Once the oil is hot enough,carefully drop the prepared chalks into hot oil.
While placing chaklis make flame to sim.
Now increase the flame to medium,after 2 to 3 minutes flip the chaklis to the other side .
Fry till it turns brown.
Remove it from oil using a perforated laddle and transfer to a paper towel placed colander.
Once these cooled completely,store in the air tight container.
