Idli

Ingredients 

Urad dhal ( uddina belle) ( black gram )— 1 cup
Idli rava -2 cups heaped. Or 2 cups idli rice 
Salt to taste.
Water.

Equipment: wet grinder or mixer, idli plates

Prepare batter

Wash and soak urad dhal in 3  cups of water for 5 to 6 hours minimum.

Wash rice rava and drain water and keep aside .
Or if you are using idli rice  wash and soak in a different vessel for 5 to 6 hours.

Grind the urad dhal along with  water used for soaking in a grinder into a smooth paste 

Transfer to a big container (if you are using rice grind it to a coarse consistency)

Then add the idli rave, salt to the idli batter and mix well .

Cover it with the lid and let it ferment overnight.

Next day batter doubles. Mix well

To make idlis 

Grease the idli plates with oil, pour a laddle full of  batter into it .
Place them in the pressure cooker or steamer and steam for 10 to 12 minutes.
Turn off the heat. Take out idli plates.
Let it cool for 5 minutes .
Serve with chutney and sambar, butter.
