Badam halwa
Ingredients
Badam (almonds) —1/2 cup
Milk —1/2 cup
Sugar—1/2 cup or little less
Pure ghee—2 to 3 tablespoon
Cardamom powder(ellaki//elaichi powder )—1 tablespoon
Kesari (saffron strands )—a big pinch soaked in 2 tablespoon of milk
Method
Soak badam in hot water for 1 hour or soak in room temperature water 6 to 7 hours.
Peel the skin. Transfer to the mixer jar and grind to coarse paste along with milk.
Now take a thick bottomed kadai or non -stick pan, keep on medium heat and add 1 teaspoon of ghee. Add the badam paste and sauté for a second.
Next add sugar keep stirring on medium low heat .
Add the kesar soaked in milk stirring all along.
It will start becoming thick. At this point add 2 tablespoon of ghee and continue stirring.
After sometime the mixture starts separating from the pan bottom. At this point add cardamom powder. Continue stirring till you get the right consistency.
Switch off the stove.Transfer to a bowl.
You can serve hot or cold badam halwa.
