Akki hittina tambittu ( rice flour sweets)
Ingredients
Rice( akki)— I cup
Water — enough to soak rice.
To make rice powder
Wash and soak rice in enough water overnight or at least for 3 to 4 hours.
Drain water completely in a colander.
And spread rice on a white cloth or towel for 1/2 an hour in shade .
Grind this rice to a fine powder in a mixer and sieve it through a fine siever.
Ingredients for making tambittu
Rice flour—2 cups
Jaggery powder( Bella// gud)— 1 cup
Fresh Grated coconut—1/2 cup
Cardamom pods(ellaki//elaichi)—5 to 6
Water—1 cup
Ghee — 1 teaspoon
Method for making tambittu
Take water in a thick bottomed kadai or pan, heat it on medium flame.
Add ghee and jaggery powder.
Once jaggery and water starts boiling add grated coconut and cardamom powder.
Keep stirring and allow it to boil for few more minutes to one thread consistency.
Reduce the flame add rice flour slowly mixing all along.
Mix it thoroughly till you get the consistency. Turn off the heat.
Let it cool for a while. Take small desired amount and make oondae or laddu shape.
