Masala dosa

Ingredients 

Sona masoori rice—1 1/2 cup
Idli rice —1 cup
Urad dhal ( uddina belle)—1/2 cup
Avalakki ( thick poha )—1/4 cup
Channa dhal ( kadale belle )—1/4 cup
Fenugreek ( menthya kaalu )—1 tablespoon 
Salt to taste.

 Method for making batter

Wash all the ingredients except salt in water 3 to 4 times.
Soak in enough water for 5 to 6 hours.

Grind the soaked ingredients in a grinder or mixer to a fine paste using required amount of water.

The batter should not be too thick nor too thin.
Add salt  and mix well.

Transfer the batter to an big vessel or container.cover and allow it to ferment overnight or 9 to 10 hours.

Next day batter doubles.
Mix the fermented batter well.

 To make dosa 

 Heat the tava or skillet on medium heat and grease it.

Once its hot pour  a laddle of batter in the centre and spread in the circular motion .

Pour oil around and to edges cover with a lid and cook on medium heat.
Once dosa turns brown and crispy apply red chutney and serve with alu irulli palya.
